Trio of Severn and Wye salmon, smoked, poached and beetroot cured, sour cream, Avruga caviar and blinis

Duck liver and Cointreau parfait, caramelised orange and watercress salad, toasted brioche

Baked West Country Aldwych goats’ cheese, maple roasted Williams pear, sweet pickled heritage beetroot and hazelnut crumble (v)

Main course

28 day, dry aged Aubrey Allen roast rump of beef, slow cooked Ox cheek, glazed sand carrot with bone marrow fried breadcrumbs, celeriac and truffle puree, sauce Bordelaise

Cornish day boat fish stew with monkfish, gurnard, scallop and mussels, rouille, sautéed La Ratte potatoes, fine beans and rouille

Jerusalem artichoke, wild mushroom, spelt and carnaroli risotto, griddled tardivo, purple sprouting broccoli and Old Winchester cheese crisp (v)

Dessert

Pineapple and mango pavlova, coconut sorbet and passion fruit gel
