Twice-baked goat's cheese soufflé, roasted heritage beetroot and candied walnuts (v)

Pressed Persian-style chicken, spiced apricot relish, garlic and coriander flatbread

Fillet of Herefordshire beef, wilted spinach, wild mushrooms and truffle sauce

Roasted stone bass with samphire, cocotte potatoes, saffron and mussel velouté
